看過紅酒杯裡的紅酒嗎?色澤溫潤如琥珀,有時又如紅寶石般璀燦。實際上,喝完紅酒的酒杯裡,殘存的液體經風乾結晶,如同各種寶石般耀眼!葡萄在釀造過程中,隨著酒精濃度提高,內含酒石酸鹽類溶解度會跟著降低,因此容易形成結晶。取一小滴紅酒在玻片上,等乾燥後置於偏光顯微鏡下,由於酒石酸鹽類的結晶具有雙折射特性,隨材質和厚度不同,呈現出變幻迷離的色彩,以及各式各樣獨特的形狀。其實紅酒就是一杯液體紅寶石。
Have you ever seen wine in a wine glass? Its luster is warm like amber or sometimes bright like a ruby. Once wine has been consumed, the residue at the botttom of the glass sparkles like gemstones after air-drying and crystallization! During the fermentation of grapes, as alcohol level rises, the solubility of tartarates decreases, making it easier for them to form crystals. Place a drop of red wine on a slide. Once dried, view under a polarizing microscope. As the tartarates crystallize, they become birefringent. Due to differences in composition and thickness, colors fluctuate and blur, forming unique shapes. Actually, red wine can be thought of as liquid rubies.
