看過紅酒杯裡的紅酒嗎?色澤溫潤如琥珀,有時又如紅寶石般璀燦。實際上,喝完紅酒的酒杯裡,殘存的液體經風乾結晶,如同各種寶石般耀眼!葡萄在釀造過程中,隨著酒精濃度提高,內含酒石酸鹽類溶解度會跟著降低,因此容易形成結晶。取一小滴紅酒在玻片上,等乾燥後置於偏光顯微鏡下,由於酒石酸鹽類的結晶具有雙折射特性,隨材質和厚度不同,呈現出變幻迷離的色彩,以及各式各樣獨特的形狀。其實紅酒就是一杯液體紅寶石。
